Product Description
This coffee is part of our Orange Bourbon Project with Finca Majahual, where we partnered with producer Patrick Murray to explore four post-harvest processes using a single Orange Bourbon lot.
This 48-hour anaerobic process adds complexity to the varietal, with hand-selected cherries undergoing sealed, oxygen-free fermentation in food-grade barrels. This precise fermentation enhances fruit character while maintaining the varietal’s clarity and structure. Once fermented, the cherries are carefully moved to raised beds to begin a slow, even drying phase under shade, before being transferred to the farm’s greenhouse to stabilize moisture and protect the integrity of the beans. The full drying process takes approximately 26 days, ensuring both consistency and cleanliness in the cup, with notes of red grape, dates, and tangerine, soft, expressive, and layered.
The unique conditions of the Los Naranjos Valley, with its cool air currents and fertile volcanic soil, bring further distinction to this lot. Processing on-site gives the Majahual team full control over quality and allows them to push boundaries in pursuit of new sensory profiles.
